About Bar Cosme

This fall, Chef Enrique Olvera and the Casamata team are opening Bar Cosme at 372 Lafayette Street in NoHo. Inspired by the bar at our sibling restaurant Cosme, Bar Cosme is a restaurant and cocktail bar built for the evening, with a full sharing menu, prix-fixe and à la carte options, and an emphasis on raw and lightly cooked dishes served with tortillas made fresh in house. We’re building our opening team now and looking for a Tortilla Line Cook who wants to be part of it from day one.

The Role

Reporting to the Chef de Cuisine, the Tortilla Line Cook prepares the fresh tortillas at the heart of Bar Cosme’s menu, with consistency, precision, and respect for traditional Mexican technique. You’ll handle masa with care, cook every tortilla to standard, and keep quality steady from prep through the end of service while supporting the rest of the kitchen team.

What You’ll Do
  • Prepare, press, and cook fresh tortillas following Bar Cosme’s recipes and quality standards
  • Monitor masa consistency, portioning, cooking temperatures, and proper holding
  • Produce tortillas in the right quantities to keep service and the menu running smoothly
  • Keep uniform size, texture, and doneness, even during high-volume service
  • Maintain a clean, organized, and efficient station from prep through service
  • Follow food safety, sanitation, and allergen procedures
  • Communicate clearly and support the kitchen team throughout service
What You Bring
  • At least 1 year of experience making tortillas or working with masa (preferred)
  • Previous professional kitchen experience (preferred)
  • Familiarity with Mexican ingredients and traditional preparation techniques is a plus
  • Strong time management and the ability to stay consistent during busy service
  • Sharp attention to detail and real pride in product quality
  • Ability to follow recipes, production standards, and direction from culinary leadership
  • A team-first attitude and appreciation for Mexican culinary traditions
  • Availability for evenings, weekends, and holidays
  • Food Handler certification preferred
What We Offer
  • Health / dental / vision insurance
  • Paid time off
  • 401(k)
  • Family Meal
  • Service recognition awards
  • Education reimbursement
  • The chance to join an opening team and grow within the Casamata restaurant group
Physical Requirements

Standing for extended periods, frequent repetitive hand and arm movements, lifting and carrying masa and kitchen supplies, and working safely around hot cooking surfaces and equipment.
